Hello all, I am new to this forum. I recently developed an obsession with J-knives and I need a recommendation for my first love. "The fujiwara FKM is pretty ideal for this kind of thing. Cost is $83 on Chef Knives to Go for the 240mm. This has caused me to lean more toward the Fujiwara FKM. So for one person a $20 Woolworth's knife will genuinely be better than a $2000 Hattori.
